Equipment

  • large baking sheet
  • Parchment paper
  • Large mixing bowl
  • Spatula
  • Sharp knife or pizza cutter
  • Small, microwave-safe bowl

Ingredients

  • 1 cup 2% cottage cheese
  • 1/2 cup almond flour
  • 1/2 cup all purpose flour
  • 1/2 tsp baking powder
  • 1/2 tsp Italian seasoning
  • 1/4 tsp sea salt
  • 1/3 cup mozzarella cheese, shredded
  • 1/4 cup parmesan cheese, grated
  • 2 tablespoons unsalted butter, melted
  • 1 to 2 cloves garlic, minced
  • 1 tablespoon fresh parsley, finely chopped

Instructions

Preparing the Dough

  • Preheat your oven to 350°F (175°C) and line a large baking sheet with parchment paper.
  • In a large mixing bowl, combine the cottage cheese, almond flour, all-purpose flour, baking powder, Italian seasoning, and sea salt. Stir everything together with a spatula until a thick dough forms. Fold in the shredded mozzarella and grated parmesan until evenly distributed.

Shaping and Baking

  • Transfer the dough onto the prepared baking sheet. Gently shape it into a rectangular loaf, about 1 inch thick, ensuring even thickness for uniform baking.
  • Bake for 20-30 minutes. To create pull-apart sections, remove the loaf after approximately 15 minutes, lightly score lines across the dough with a sharp knife or pizza cutter, then return to the oven to finish baking until golden brown and cooked through.

The Finishing Touch

  • While the breadsticks bake, prepare the garlic butter. In a small, microwave-safe bowl, melt 2 tablespoons of butter. Stir in 1 to 2 cloves of freshly minced garlic and 1 tablespoon of finely chopped fresh parsley.

Cooling and Serving

  • Once golden brown, remove the loaf from the oven. Allow it to cool on the baking sheet for at least 10 minutes to firm up.
  • After cooling, slice the loaf along the scored lines. While still warm, generously brush the garlic-herb butter over the top and sides. Serve immediately.

Notes

For a smoother texture: If you prefer a uniform dough, process the cottage cheese in a food processor or with an immersion blender before mixing it with the dry ingredients.
Scoring the loaf: Halfway through baking, lightly score the top of the loaf with a knife to create defined, easy-to-pull-apart breadsticks.
Crispier edges: For extra crisp edges, bake a few minutes longer until the top is a deep golden brown.
Storage: Store leftover breadsticks in an airtight container in the refrigerator for up to 3-4 days. For longer storage, they freeze well.
Reheating: Reheat in an oven or an air fryer at 350°F (175°C) for about 5-7 minutes to restore crispness. Avoid microwaving, as it can make them rubbery.
Air Fryer Method: Form smaller, individual breadsticks or a smaller loaf. Air fry at 330°F (165°C) for 12-15 minutes, flipping them halfway through.
Pairings: Serve with marinara sauce, pizza sauce, ranch dressing, or alongside tomato soup or a large salad.
